Over the course of my life, I’ve rolled a fair number of burritos. And over and over again, I keep getting asked: Burrito Queen, is it better to wrap my burrito while the tortilla is warmed or fresh from the fridge? The debate rages on, my friends, and there are pros and cons of both positions:
Warm tortilla’s provide a supple base with which to wrap your fixins. But be warned, if warmed too much they may scald your hands.
A cooled tortilla is best for a burrito filled with lettuce and other fresh vegetables, as it provides a delightful crunch at first bite. But be warned — a cool tortilla also means more tears and tears (that’s right, BOTH pronunciations apply!), and you may risk escapee sour cream.
Burrito Queen recommends balance — if you want the bite of the cool tortilla, wrap it warm and let it cool.
